Our restaurants span the reaches of international cuisines, while remaining uniquely steeped in Hong Kong’s blend of cultures. Whether it’s a humble bistro in the heart of town, a continental grand café with a contemporary touch, or a three-storey neighbourhood hangout, every one of our venues offers a new experience.

William Nai - Restaurant & Bar Manager - PUBLIC & Plat du Jour

With multiple venues connected under their own single concept, both PUBLIC and Plat du Jour demand great efforts to oversee their diverse operations. Restaurant & Bar Manager William deftly balances both PUBLIC and Plat du Jour’s many facets:

PUBLIC is where people come together. An eclectic concept sees four locations serving everything daily, from sandwiches and samosas, to sushi and seasonal favourites. A full-service eatery at PUBLIC Restaurant, quick-stop grab-and-go at the two Ground PUBLIC venues and the multi-cuisine kiosks of PUBLIC Deli.

Plat du Jour is your local French bistro, where we proudly serve authentic cuisine in a stylish setting. A French bistro with indoor terrace at Pacific Place, quick-stop grab-and-go of coffee and pastries at the vintage Citroën and the local French corner cafe at Quarry Bay.

Previously work with The Peninsula and EAST, Hong Kong, William first joined the Swire Hotels in 2010, with over 6 years in Swire Restaurants, William is more than suited to face the challenge, being the restaurant and bar veteran and play a key role to oversees the two restaurant brands in Swire Restaurants.

Guzman Vereda - Restaurant & Bar Manager - MR & MRS FOX

Born in Spain and raised around the world, Guzman Vereda found appreciation for different cultures and passion for meeting people in every city that he and his family settled.

His passion for meeting and serving people led him to begin his journey in the hospitality industry in Madrid and Seville. In 2013, Guzman moved to Hong Kong and fell in love with the culture and vibrancy of the city. Prior to joining Swire Restaurants, he worked and gained experience at restaurants that served European & Spanish cuisines, such as Dragon-i and The Optimist.

Now with 20 years of experience, Guzman excels in managing the operations and leading the passionate team of individuals at Mr & Mrs Fox, providing the best dining experience, and always with a smile.

Jonathan Jones - Restaurant & Bar Manager - The Continental

Born and raised in South Africa, Jonathan began his career in the hotel industry, later realising his passion lay in restaurants. He opened and managed his own restaurant in South Africa for 14 years before deciding to relocate to Hong Kong in 2017, where he was immediately attracted by the vibrancy and multicultural aspects of the fast-paced city.

Prior to joining Swire Restaurants, he joined the opening team as the Restaurant Manager of Gough’s on Gough, Timothy Oulton’s first restaurant in Hong Kong and has also worked at K11 Artus as Director of Guest Experience.

With a passion for coaching, together with over 25 years of experience gained from the hospitality world, Jonathan now leads a passionate team of individuals at The Continental, providing the best dining experience to all our guests.

Artur Aronov - Head Sommelier, Swire Restaurants

Born and raised in Estonia, Artur started his sommelier career in London in 2012, working with Michelin starred chef Jason Atherton for over 5 years until he became Head Sommelier. In 2018, Artur decided to relocate to Hong Kong.

As Head Sommelier of Swire Restaurants, Artur oversees the wine programme at The Continental, Plat du Jour and MR & MRS FOX. Inspired by boutique wine makers who practice sustainable agriculture and winemaking, the wine programme performs regular reviews to ensure the wine lists are in line with the current trends and appeal to the diverse customer base of Swire Restaurants.

Working in the hospitality and wine industry for over 8 years, Artur excels in managing wine programmes and coaching the team. His passion for teaching is evident through his regular wine training sessions and openness in sharing his own personal work experiences. He encourages his team to develop their wine knowledge in order to provide the finest dining experience at Swire Restaurants.
